Japanese Tacos and Mexican Sushi Are Arriving in Dallas. That’s Not as Crazy as It Sounds.

One of Dallas’ most famous taco shops is serving sushi rolls. A few miles up the road, a high-quality sushi bar is making tacos.

Ask the chefs, and they’ll offer a surprising answer: The connection between Japanese and Mexican food has century-old roots. Tacos and sushi have more in common than Dallasites might think.

Japanese immigrants arrived in Mexico by the thousands in the early 1900s. Later on, Japanese-Peruvian fusion cuisine became famous, courtesy of migrant chefs such as Nobu Matsuhisa. It’s that cross-cultural tradition that is now arriving in Dallas.

First Look: Chimalma Taco Bar Opens Downtown

Opening a restaurant in the time of COVID-19 was not what Andrea Hermosillo had in mind when she secured a location in downtown Dallas.

Hermosillo acquired the space in January and quickly began to reconstruct it into what is now Chimalma Taco Bar. Construction was completed in March, but then the pandemic hit and everything was placed on hold.

She was unable to get any immediate inspections or licenses to open because of the closures, but eight long months after acquiring the space, Chimalma was able to open in late September. 

Chimalma, in the Nahuatl language, means “shield hand,” and it’s the name of a goddess of fertility for the Aztecs.

‘These are Preventable Deaths’: Dallas County to Count 1,000 Coronavirus Fatalities

Another day, another bleak coronavirus milestone. Monday, Dallas County Health and Human Services announced two more COVID-19 deaths, bringing its total to 997.

As the county nears 1,000 fatalities, the United States is rapidly approaching 200,000, according to AP News. Considering how infectious the coronavirus is, Dallas County’s number isn’t surprising, said Dr. Erin Carlson, an associate clinical professor in the College of Nursing and Health Innovation at the University of Texas at Arlington.

Still, it could have been a lot lower, she said.

“What was unexpected is that we would let it go this far,” Carlson said. “What was completely unexpected was that there would not be more federal control and oversight … over public health during this time.”
